Mustard pork roast in the air fryer

Instructions

• 1.Roast preparation

  Remove the roast from the refrigerator 30 minutes before cooking.
  Mix the olive oil, minced garlic, herbes de Provence, salt, pepper and Dijon mustard.
  Generously brush the roast all over, pressing well on top to form a nice crust.
  

• 2.Searing the roast

  Brown the roast in a very hot pan for 2 minutes on each side to color it well.
  

• 3.Air fryer cooking

  Place the roast in the air fryer basket and cook at 160°C in Air Fry mode for 40 to 45 minutes, flipping halfway through.
  Check the core temperature (65°C for pink, 75°C for well done).

• 4.Resting and tasting

  Remove the roast from the air fryer and let it rest under aluminum foil for 10 minutes before slicing.
  Serve with a sauce and side dish of your choice.
