Slow-cooked beef roast in the air fryer

Instructions

• 1.Roast preparation

  Remove the roast from the refrigerator 1 hour before cooking.
  Mix the oil with herbes de Provence, minced garlic, salt and pepper, then brush the roast all over.
  Massage well to infuse the meat.
  Sear it over high heat in a pan for 2 minutes on all sides.
  Deglaze the pan with 100 ml of water and let rest.
  

• 2.Air fryer cooking

  Insert the probe into the center of the roast and place it in the air fryer basket.
  Cook at 80°C in Bake mode for 1h30-2h, until the core temperature reaches the desired doneness: 50°C for rare, 60°C for medium, 70°C for well done.
  As long as the thermometer probe hasn't beeped, don't touch anything.
  

• 3.Resting the meat

  Remove the roast from the air fryer and let it rest under a sheet of aluminum foil for 10 minutes before slicing.
  

• 4.Tasting

  Serve hot with pepper sauce, mashed potatoes or roasted vegetables.
