Instructions
1.Rehydrate noodles & mushrooms
Soak the black mushrooms and glass noodles in very hot water for 10 minutes.
Drain.
Finely chop the mushrooms, cut the noodles into 3-4 cm segments.2.Mix the filling
In a large bowl, add ground pork, carrots, onions, mushrooms, noodles, egg, sugar, nuoc-mam and pepper.
Mix for 1-2 minutes until you get a smooth filling that holds together.3.Prepare the rolling station
Mix the water with 1 teaspoon of white vinegar in a large dish.
Place a clean towel on the work surface to lay the softened wrappers.4.Roll the spring rolls
Dip a wrapper for 2-3 seconds in the vinegar water, place it on the towel.
Place 1 generous tablespoon of filling near the edge.
Fold the sides then roll tightly into a cylinder.
Repeat for ~25-30 spring rolls.5.Preheat & oil
Preheat the air fryer for 3 minutes at 200°C.
Very lightly spray the spring rolls with oil (or brush with an almost dry brush).

Arrange the spring rolls in a single layer without touching.
Cook 14-16 minutes at 200°C, flipping halfway through.
Extend by 2 minutes if needed for even browning.7.Rest & serve
Let rest 2 minutes on a rack to maintain crispiness.
Serve immediately (on their own or with a sauce of your choice).

Tips for success
Add 1 teaspoon of white vinegar to the wrapper soaking water: this limits sticking and improves crispiness.
Dip them very quickly (2-3 seconds).
Roll tightly and place the spring rolls on a towel to avoid moisture before cooking.
Variations and accompaniments
You can add garlic or grated ginger to the filling for more aroma.
Serve with lettuce, mint, cilantro and a homemade nuoc-mam sauce (water + sugar + lime).
Raw spring rolls freeze very well: you can cook them directly in the air fryer (add 3-4 minutes).
About this tip
Adding a little white vinegar to the rice paper soaking water is a technique passed down in some Asian kitchens.
It helps soften the wrapper without making it sticky and gives a crispier result after cooking.
